Sorry if it's a dumb question - but I can't find any info on angled necks other than that they exist and that they are necessary for some bridges? If i'm getting a Schaller 456, they get the pocket @ the right angle for me, so does that i mean i need to buy an angled neck or a straight neck?

Same old neck. They angle the pocket to compensate for the bridge.

but i mean some necks in their in-stock are labeled "Warmoth Pro" and others are "Angled Warmoth Pro" which was really confusing

Warmoth Pro refers to the neck construction, not the peghead.  That neck construction is available with a straight peghead for Strat, Tele, and CBS.  The 13 degree angled ones...there's a lot, including an angled Strat.  The Vintage Modern and Total Vintage neck constructions are only available in straight.  The 24 3/4" conversion neck is also the "Pro" construction.
