I've been playing for over 30 years and, now that I think about it ... I haven't either!
Not saying that I haven't "built" a few virtual Jazzmasters/casters. I'll probably have one at some point ... probably with a recessed Schaller Floyd.

I don't know the exact thickness. Pots are installed already on the bodies I have (Diamondback and Tele), so can't measure. I do know that I was planning to use concentric pots on my (still in progress) rear route Tele and the ones from Warmoth will definitely not work. Saving them for a future...
Keep in mind you will need long shaft pots for a rear route. I learned this the hard way. Long shaft concentric pots can be difficult, if not impossible, to find.
My first knife was a switchblade comb (remember those? ;) ).
I carried a classic Buck folding hunter on my belt for a few years during my young redneck days.

If you want to keep it simple, you could even do a single pickup to start with. I covered the neck pickup route on my latest build with a "no neck" f-hole pickguard. Emerson Custom pre-wired Esquire harness simplified the wiring.
